Chicken Tikka Masala (India)

Originating from the Indian subcontinent, Chicken Tikka Masala is a beloved dish known for its rich, creamy sauce and tender pieces of marinated chicken. Ingredients:

  • 500g boneless chicken, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 cup tomato puree
  • 1 cup heavy cream
  • Fresh cilantro, for garnish

Instructions:

  1. In a bowl, combine the yogurt, lemon juice, 1 teaspoon of cumin, 1 teaspoon of coriander, 1 teaspoon of garam masala, turmeric, paprika, and salt. Add the chicken pieces and mix well. Allow the chicken to marinate for at least 1 hour, or overnight for best results.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook until it becomes soft and translucent.
  3. Add the minced garlic and grated ginger to the skillet. Cook for an additional 1-2 minutes, until fragrant.
  4. Next, add the remaining spices – 1 teaspoon of cumin, 1 teaspoon of coriander, and 1 teaspoon of garam masala. Stir well to combine.
  5. Pour in the tomato puree and stir until the spices are evenly distributed.
  6. Reduce the heat to low and simmer the sauce for about 10 minutes, allowing the flavors to meld together.
  7. In a separate pan, cook the marinated chicken on medium-high heat until it is cooked through and slightly charred. This should take about 8-10 minutes.
  8. Add the cooked chicken to the simmering sauce and stir to coat the chicken pieces.
  9. Pour in the heavy cream and stir until the sauce is creamy and well combined.
  10. Cook for an additional 5 minutes to heat the chicken through and allow the flavors to meld together.
  11. Garnish with fresh cilantro and serve hot with basmati rice or naan bread.
