Spaghetti Carbonara (Italy)

Spaghetti Carbonara is a classic Italian pasta dish that is loved by many around the world. Originating from Rome, this simple yet flavorful dish is made with just a few key ingredients. In this article, we will guide you through the process of making authentic Spaghetti Carbonara at home.

Ingredients:

  • 200 grams spaghetti
  • 150 grams pancetta or bacon, diced
  • 3 large eggs
  • 50 grams grated Pecorino Romano cheese
  • 50 grams grated Parmigiano-Reggiano cheese
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Extra virgin olive oil

Instructions:

1. Start by boiling a large pot of salted water. Cook the spaghetti according to the package instructions until al dente. Drain the pasta, reserving some of the cooking water.

2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced pancetta or bacon and cook until crispy and golden brown.

3. While the pancetta is cooking, in a medium bowl, whisk together the eggs, grated Pecorino Romano cheese, grated Parmigiano-Reggiano cheese, minced garlic, salt, and black pepper. Set aside.

4. Once the pancetta is cooked, remove it from the skillet and set it aside on a plate lined with paper towels to absorb any excess grease.

5. In the same skillet, add the cooked spaghetti and toss it in the rendered fat from the pancetta. This will infuse the pasta with a delicious smoky flavor.

6. Remove the skillet from the heat and let it cool slightly. Then, pour the egg and cheese mixture over the spaghetti, quickly tossing it to coat the pasta evenly. The residual heat will cook the eggs, creating a creamy sauce.

7. If the sauce seems too thick, gradually add a small amount of the reserved pasta cooking water and continue tossing until you reach the desired consistency.

8. Finally, add the crispy pancetta back to the skillet and give it one last toss to distribute the flavors.

9. Serve the Spaghetti Carbonara immediately, garnished with some additional grated cheese and freshly ground black pepper.
